Turrets of Goat Cheese, Dates and Grapes

Ingredients for 4 people:
  • 100g seedless white grapes
  • 75 grams dates
  • 3 sprigs thyme
  • salt and pepper
  • 1 roll of cold fresh goat cheese (150g)
  • 3 tablespoons white balsamic vinegar
  • 3-4 tablespoons olive oil
  • 1 shallot
  • 100 g mixed salad leaves (eg rocket)

Preparation:
  1. Wash the grapes. Halve and pitted dates. Cut half of the dates and the grapes into small pieces and mix them together.
  2. Keep a few small pieces of thyme for garnish. Wash the thyme and ris the leaves from the twigs. Mix it with the date-grape mixture.
  3. Peel and chop the shallot finely. Make a dressing of balsamic vinegar, oil, shallot and bring to taste with salt and pepper.
  4. Halve the remaining grapes, cut the remaining dates into strips and mix both the lettuce. Mix half the dressing with the salad.
  5. Cut the goat cheese with a - rinsed with cold water - knife into 8 slices. Put four slices on a serving dish or small bowls.
  6. Divide the grape-date mixture over the goat cheese and place the remaining slices of goat cheese on it. Drizzle the remaining dressing over the turrets cheese and garnish with the reserved thyme sprigs.
  7. Put the lettuce in the turrets on the scale (gently) and serve with crusty bread.
