This is a lovely fresh salad that my grandmother and mother always made. I see it as a family recipe, though a tomato salad course not unique. But do it only once and you will find that it is really great.

- 8 or 9 tomatoes
- 1 chopped red onion
- olive oil
- 1/2 lemon
- large bunch parsley
- pepper / salt

- It is important that you start peeling the tomatoes. This makes the tomatoes slightly softer. This is done by a cross in the sheet set with a sharp knife. Then immerse them about 10 seconds in boiling water and then put them in ice water. This stops the thread and you can now easily loosen the tomato skin.
- Cut tomatoes now all in equal slices and place on a flat dish.
- Sprinkle chopped red onion over here and drizzle over with olive oil.
- Sprinkle over with pepper and a little salt. To a somewhat acidic taste to show people you have half a lemon over it.
