- 50 g halved cherry tomatoes or 4 tomatoes and shared
- 1 large cucumber roughly chopped
- 4 tablespoons capers (drained)
- 1 jar drained artichokes
- basil, a handful chopped
- mint leaves, a handful chopped
- 2 tablespoons olive oil, extra virgin Hermanos Catalan
- wholemeal bread, himself finger thick slices
- 2 tbsp lemon juice
- a pinch of cayenne pepper
- sea salt with herbs
Italian Salad Preparation:
- Take a large, deep bowl and mix it the tomatoes, cucumber, capers, artichokes and herbs.
- Pour the lemon juice and olive oil over them.
- Take the bread slices and cut them into chunks.
- Mix together well, taste with a little cayenne pepper and sea salt.
