Ingredients for 4 Persons:
Preparation:
- 4 haddock or sea bass fillets
- 1 tbsp. curry powder
- 1 pinch turmeric
- 1 tbsp. sunflower oil
- 1 chopped onion
- 1 clove garlic, finely chopped
- 300 gr. rice
- piece ginger, peeled and finely chopped
- 4 hard boiled eggs
- cilantro for garnish
- wedges of lime / lemon
- pepper / salt
Preparation:
- Heat the butter and oil in a pan. Fry the onion.
- 8-10 minutes after add the ginger, garlic, turmeric and curry powder and cook for 2 minutes.
- Add the rice and stir thoroughly. Pour the water there. Turn the heat to high and bring the water to a boil.
- When the water boils turn the heat to low and cook for 15 minutes again boil. Heat olive oil after 10 minutes in a frying pan.
- When the oil is hot put the fish on the skin in the pan. Turn immediately the fire as low as possible. Let the skin in 2 minutes quiet crisp.
- Turn the fish over and cook for 1 -2 minutes. Take the kedgeree from the heat and place the fish on it.
- Apply if needed to taste with salt and pepper. Serve the kedgeree with boiled eggs and lime or lemon wedges.
