This carrot ginger soup is what you call a real horderves recipe. With flavors from around the world. The carrot soup is sold with creme fraiche. This is not necessary, but nice!
Ingredients
Carrot Soup for 4 persons
• 1 kg. carrots, peeled and chopped
• the juice of a lime
• 1 tbsp. brown sugar
• 1.5 l. broth, preferably chicken, unless you choose a vegetarian soup
• 1.5 tsp. cinnamon
• 1 tsp. cayenne pepper
• 1 tsp. turmeric, turmeric
• 2 garlic cloves, finely chopped
• 1 inch ginger, finely chopped
• 2 onions, coarsely chopped
• 2 tbsp. olive oil
• pepper / salt
Preparation
1. Cut all ingredients. Heat the olive oil in a heavy saucepan. Add the onions when the oil is hot.
2. When the onions are translucent, add successively the ginger, garlic and spices. Stir for 1 to 2 minutes by controlled.
3. Put the carrots along with the broth. The broth gives some extra flavor to the soup.
4. Bring to the boil and let it simmer on low heat for 30 minutes.
5. Remove the pan from the heat and puree the soup with a hand blender or food processor eg.
6. Add the lime juice, sugar, salt and pepper. Heat the carrot soup again and serve him then.
